From here . 1 (8 ounce) package dry black beans 2 1/2 quarts water 3 tablespoons olive oil 3 cloves garlic, peeled and minced 1 large onion, chopped 1 tomato, cubed 1 carrot, cubed 1/2 pound bacon strips, diced 1 tablespoon chopped fresh parsley salt and pepper to taste Place beans in a pressure cooker with enough water to cover, and soak 12 hours, or overnight. Asian Beef with Snow Peas

Delish...from here . 3 tablespoons soy sauce 2 tablespoons rice wine 1 tablespoon brown sugar 1/2 teaspoon cornstarch 1 tablespoon vegetable oil 1 tablespoon minced fresh ginger root 1 tablespoon minced garlic 1 pound beef round steak, cut into thin strips 8 ounces snow peas In a small bowl, combine the soy sauce, rice wine, brown sugar and cornstarch. Set aside. Heat oil in a wok or skillet over medium high heat. Stir-fry ginger and garlic for 30 seconds. Add the steak and stir-fry for 2 minutes or until evenly browned. Add the snow peas and stir-fry for an additional 3 minutes. Add the soy sauce mixture,

Honey Glazed Ham

From here. We made it twice, and loved caramelizing it with a the lighter. 5 pounds ready-to-eat ham 1/4 cup dark corn syrup 2 cups honey 2/3 cup butter Preheat oven to 325 degrees F (165 degrees C). Score ham, and stud with the whole cloves. Place ham in foil lined pan. In the top half of a double boiler, heat the corn syrup, honey and butter. Keep glaze warm while baking ham. Brush glaze over ham, and bake for 1 hour and 15 minutes in the preheated oven. Baste ham every 10 to 15 minutes with the honey glaze. During the last 4 to 5 minutes of baking, turn on broiler to caramelize the glaze. Remove from oven, and let sit a few minutes before serving.

Shredded Beef/Chicken/Pork Enchiladas

1 pounds shredded meat (leftovers are great) 1/2 tablespoon ground cumin 1/4large onion, chopped 1 (4 ounce) cans chopped green chile peppers 1 tablespoon all-purpose flour 1/4 c milk 1 cups shredded Monterey Jack cheese, divided old rice 1 cup oil for frying 8(6 inch) corn tortillas In a large skillet, saute the onion until just soft, not browned. Mix in flour and green chilies. Stir constantly for 2 minutes to cook the flour taste out. Stir in sour cream and 2 cups of Monterey Jack cheese. Cook on low for 10 minutes, stirring often, until the cheese is all melted and mixed. Set aside and let cool. In a large heavy skillet, heat the olive oil. Using tongs dip the tortillas, one at a time, into the oil for 30 seconds each side.

I had two giant Jalapeno plants that God put in my garden to keep the bugs away (I didn't plant them this year) so I had to find something to do with my millions of jalapenos. Chocolate Pear Pudding Pie

Chocolate Pear Pudding Cake It sounds unusual, but it is delicious. Gary found the recipe on NPR from the comfort food cook, Nigella . Especially nice on fast Sundays. Ingredients 2 cans (14 ounces each) pear halves in juice 1 cup plus 2 tablespoons sugar 3/4 cup plus 1 tablespoon flour 1/4 cup cocoa powder 10 tablespoons (1 ¼ sticks) softened butter, plus more for greasing 1 teaspoon baking powder 1/4 teaspoon baking soda 2 eggs 2 teaspoons vanilla extract Instructions 1. Preheat the oven to 400 degrees F. Lightly grease an 8 1/2-inch square ovenproof dish with butter. 2. Drain the pears and arrange them in the dish. 3. Combine the remaining ingredients in a food processor and blitz till you have a batter with a soft dropping consistency. 4. Spread the batter over the pears. Bake for 30 minutes. 5. Let stand for 5 or 10 minutes before slicing. (I cut 2 down and 2 across to make 9 slices.) Serve with chocolate sauce. Serves 6 to 9.
