One-Bowl-Brownies

From Baker's Website....these are Gary's favorite brownies. I like 'em with milk chocolate chips too. 4 squares Unsweetened Baking Chocolate 3/4 c butter or margarine 2 c. sugar 3 eggs 1 tsp. vanilla 1 c. flour 1 c. pecans Preheat 350 F. Line 13x9 bakin with foil. Frease foil Microwave chocolate buter for 2 min. Sir until chocolate is completely melted. Stir in sugar, eggs, and vanilla. Add flour and pecans. Mix well. Spread into pan. Bake 30-35 minutes

Indonesian chicken

adapted from Erin's Indonesian Chicken...allrecipes.com INGREDIENTS ( Nutrition ) 1 cup uncooked long grain white rice 2 cups water broccoli heads 2 teaspoons olive oil deboned chicken chunks 3/4 cup chicken broth 1/3 cup smooth peanut butter 2 teaspoons honey 1 tablespoon soy sauce 2 tablespoons lemon juice 3 green onions, thinly sliced 2 tablespoons chopped peanuts (optional)

Sourdough PizzA

Has the sourdough taste without taking forever..... 1 1/4 c warm water 2 teaspoons active dry yeast 1 tsp sugar 2 T oil 1 c. sourdough starter, room temp 3 to 3 1/2 c. flour 1 tsp salt Proof Yeast. Mix oil, sourdough starter, and salt and 1/2 flour. Gradually add enough remain flour. Knead dough, let rise double. Punch down and shape into two pizza crusts Preheat oven to 400F Prebake for 10 mintes. Brush crust with oil and add toppings Bake 25-30 minutes at 425F

Salsa Chicken

4 boneless chicken breasts 1 c. salsa 1 c. cheese 4 tsp. taco seasoning. Rub chicken in taco seasoning. Dump salsa on. Dump cheese on. Bake 25-30 minutes at 350F. Serve over rice.

Corinne's Pudding Pie

This tastes like a candy bar. 1 1/2 c sugar 1/3 c cornstarch 2 squares baking chocolate 1/2 tsp salt 3 c. milk. Boil for 1 minute. Add mixture to 4 mixed egg yolks. Add the egg yolk mixture back into the pot and cook 2 minutes, but do not boil. Pour into graham cracker crust and chill. Serve chilled.

Honey Baked Chicken

1/2 c butter 1/2 honey 1/4 c mustard 1 tsp salt 1 tsp curry powder Marinate chicken tenderloin (or other chicken) in this for 30 minutes in the baking pan, and bake 40-60 minutes at 350 or until juices run clear.

Whole Wheat Bread

This makes 2 loaves, a great use for that cannery wheat....and dough for scones (fried bread) too. Proof Yeast: 1 T yeast, 1 T sugar, 1/3 c. warm water, let stand 10 minutes. Add 2 1/2 c hot water, 3 1/2 c. whole wheat. 1 T. Gluten. 1T. Lemon Juice (just added this to my bread today and it is extra soft) Mix until blended, add 1 T salt, 1/3 c. oil, 1/3 c. honey (or sugar). Mix, Add 1 c. white flour. Then add 1 1/2-2 cups white flour or whole wheat (depending on what you like the taste of better, I do whole wheat because it is healthier, and the gluten makes it stick, so you don't need as much white flour, but it is more dense). Mix well, knead in mixer, Mold dough on oiled or floured surface to make 2 loaves. Let rise 1/3 in bulk usually and hour or so. Bake 350F for 35 minutes.

Apple Dumplings

I have had these every year since I was little for my birthday. that and chicken cordon bleu. 1 pastry for 9" pie 2 c. brown sugar 1 c. water 4 baking apples. Cinnamon and Sugar Peel and Core Apples. (If you don't want the serving so big you can cut the apples in half). Sprinkle Cinnamon and Sugar in them and wrap them in pie dough. Put them in a pan. Over the stove stir 2 c. brown sugar and 1 c. water and some cinnamon until bubbly, pour over apples. Bake 50-80 minutes ad 425F. (This depends on the pie dough, you don't want it raw at all or it tastes gross, so for whole apples longer, smaller apples shorter. )
