Soft Whole Wheat Dinner Rolls , from The Bread Lover's Bread Machine Cookbook 2/3 cup milk 1/2 cup sour cream 1/4 cup honey 2 large eggs 4 tablespoons butter, cut into small pieces 3 cups all-purpose flour 1 cup whole wheat flour (I use white whole wheat) 1/2 cup toasted wheat germ 1 1/2 teaspoons salt 2 teaspoons SAF yeast, or 2 1/2 teaspoons bread machine yeast 1. Place all the ingredients in the pan according to the order in the manufacturer's instructions. Program for the Dough cycle; press start. 2. Grease a 9x13 inch pan. When the cycle is finished, remove dough from the machine. Turn it out onto a lightly floured surface. Divide dough in half, then roll each half into a 2 to 3 inch cylinder. With a metal dough scraper or a chef's knife, cut the cylinder into 8 equal portions. (8 equal portions makes a very generous sized roll. Sometimes I divide each cylinder into 12 portions instead.) Deglaze pan with: 2/3 c. milk 1/2 tsp. basil, thyme, or tarrgon 1/2 tsp. beef bouillon 2 tsp. dry wine or balsalmic vinegar Add 1/2 c chopped carrots 1/2 c sliced potatoes (red are preferable) Thicken with 2 tsp. flour. Waffles of Insane Greatness (from Shelley) Serves 2-3 3/4 cup all-purpose flour 1/4 cup cornstarch 1/2 teaspoon baking powder 1/4 teaspoon baking soda 1/2 teaspoon salt 1 cup whole milk or buttermilk 1/3 cup vegetable oil 1 egg 1 1/2 teaspoons sugar 3/4 teaspoon vanilla extract Butter and syrup, for serving In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, and salt; mix well. Add the milk, vegetable oil, egg, sugar and vanilla and mix well. Let the batter sit for 30 minutes. Preheat a waffle iron. Do not use non-stick spray on the waffle iron; the oil in the batter will allow the waffle to release easily. Follow the directions on your waffle iron to cook the waffles. Serve immediately with butter and syrup.

Flourless Brownies

Gary really likes these, just don't tell him what is in it. HE HE.... Ingredients 1 (15-ounce) can no-salt-added black beans, drained and rinsed 3 large eggs 1/3 cup melted butter, more for the baking dish 1/4 cup cocoa powder 1/8 teaspoon salt 2 teaspoon gluten-free vanilla extract 1/2 cup plus 2 tablespoons cane sugar 1/2 cup gluten-free semi-sweet chocolate chips 1/3 cup finely chopped walnuts Method Preheat oven to 350°F. Butter an 8-inch baking pan. Place the black beans, eggs, melted butter, cocoa powder, salt, vanilla extract and sugar in the bowl of a food processor and blend until smooth. Remove the blade and gently stir in the chocolate chips and walnuts. Transfer mixture to the prepared pan. Bake the brownies for 30 to 35 minutes, or until just set in the center. Cool before cutting into squares.

Refried Beans

These are OK, but I wouldn't make them just to eat, only for 7-layer dip. Since I don't ever buy refried beans, they are cheaper alternative. 2 T. shortening 2 T. flour 1 qt. pinto beans (cooked) garlic powder onion salt mexican seasoning chile powder Melt shortening in fry pan. Add flour. Stir in beans. With potato masher, mash beans and cook a few minutes. Add seasonings to taste. Serve with grated cheese on top.
